This was actually one of those recipes that I took from my mother’s cookbook. Her name is Diane and she is one of my favorite cooks. She was a vegetarian for most of her life, so those recipes are great for carnivores too! The recipe was originally a recipe for a salad but I thought it would be nice to have a light, summery dish, so I came up with this dish using just a few of the ingredients from the original recipe.
It was a very simple dish, but I think it is really good. The lettuce really came out well and the blue cheese added a nice contrast and a slight tartness to the salad.
