Marzetti makes a Sweet Italian dressing that worked well if you are lazy like me. I didn’t make the dressing as listed. Just purchased Italian vinaigrette and ranch to bring with. Everyone who has this salad asks for the recipe!! It really was a magical trip.

Oh, did I mention the dressing???? I believe originally, this copycat recipe for this Homemade Balsamic Vinaigrette , was published in the Chicago Sun-Times. Now I must say, the dressing that this recipe makes doesn’t look like the dressing from Portillo’s restaurant. Portillo’s dressing is white in color and possibly a little thicker. Really the differences seem pretty dang small in my estimation.
I used a finely chopped kale mix from Trader Joe’s, and probably would have liked it better if I had mixed with some Romaine too. I have half the kale mix and chicken left, so that will give me a chance to try it again. I made this for the family and the sister missionaries last night. I already had feta so I used that and smoked pulled pork instead of chicken.
If you want the authentic Portillo’s experience, Marzetti’s Sweet Italian is a close substitute you can purchase. Otherwise, this is a great salad with a slightly sweet and tangy dressing. Cook Ditalini pasta according to package instructions. The salad is tossed with an Italian vinaigrette with a hint of oregano that gives it a unique flavor. I have spilled ditalini making this recipe more times than I can count. Glad I’m not the only one. Serve dressing along side the salad or pour on and combine just before serving. Ditalini is a small, open-ended, tube shape pasta.
Drain and rinse quickly with cool water so it doesn’t stick together while it cools. Pour a few tablespoons of the dressing over the pasta and stir lightly. Set aside to cool to room temperature (spreading it into a flatter layer – versus mounded in a bowl – will speed up the cooling process). The overall taste of this salad and the dressing, on the whole, is a wonderful copycat version of the original recipe. I have made this several times now. I love the dressing and salad. I love that all your salad recipes are tried and true.
